Chia Ice Pops with Raspberries

Raspberry-Coconut-Milk-Ice-Pops

Ingredients
1 ½ cup raspberries (fresh or thawed frozen)
½ cup water
15 ounce can full fat coconut milk
1 ½ tablespoons chia seeds
six 9 ounce paper cups
6 popsicle sticks

Optional add-ins:
coconut extract
vanilla extract
lime juice
honey

Method

1. Blend the raspberries and water in a blender until a smooth texture
2. In each cup pour 2 tablespoons of raspberry puree and put in freezer for 30 minutes
3. Whisk the coconut milk and chia seeds in a bowl
4. Take the cups you put in the freezer out and pour the mixture into them and divide evenly into the six cups
5. Put the cups back into the freezer and freeze for another 30 minutes
6. After removing the cups, place a popstick in the middle of each cup and freeze again for 30 more minutes
7. Take the remaining raspberry puree into the cups and freeze for at least 4 hours
8. Peel the paper cups off before serving

For the optional add-ins:
Add coconut or vanilla extract to the coconut milk and chia seed mixture when whisking together
Add lime juice and/or honey to the raspberry and water mixture when blending
