Almond paste recipe – Our guide to making homemade almond paste for the perfect Christmas cake!

INGREDIENTS

1 lb Ground Almonds
8 oz. Icing Sugar
8 oz. Caster Sugar
2 Eggs
½ teaspoon Almond Essence
1 teaspoon Lemon Juice.

METHOD

Mix almonds and sugars together. Beat eggs with almond essence and lemon juice. Stir into the almond mixture and form into a paste. Ready-made white icing is good to use, as unlike royal icing, it remains soft.
