Voodoo Dressing
2 tablespoons Dijon mustard
2 tablespoons freshly squeezed lime juice
2 tablespoons chilli paste
1 tablespoon crushed red pepper
1/3 cup real mayonnaise
¾ cup sesame or extra virgin olive oil
½ cup white wine vinegar
¼ cup soy sauce
¾ cups sugar
2 tablespoons garlic, peeled
2 tablespoons ginger, peeled
Chicken Salad
2 halved, grilled chicken breasts, cubed, skin removed
2 tablespoons Feta cheese (optional)
salt and pepper, to taste

Method
For dressing put all your ingredients into a blender and process until smooth. Serve over cubed just-grilled chicken breast, placed on crisp lettuce and sprinkle the Feta Cheese over it. Dress up the dish with halved cherry tomatoes and sprinkle with paprika.
