Ingredients:
500g mince beef
1 tsp dijon mustard
1 tsp worcestershire sauce
2 cloves garlic, minced
1 tbsp ketchup
1 tsp thyme leaves, finely chopped
Sea salt and cracked black pepper
2 tbsp olive oil
Pickled red onion
1 red onion finely sliced
Juice of 2 lemons
For the spicy mayonaise:
75g mayonaise
1-2 tsp hot sauce
To Serve:
4 seeded buns
8 slices pancetta
75g gruyere cheese, sliced
50g rocket,
ketchup, optional.
Method
Put the red onion and lemone juice into a small zip bag ensuring all the onions are immersed in the liquid. Leave aside to pickle for at least one hour.
For the burger, combine the minced beef, dijon, worcestershire sauce, garlic, ketchup, thyme, salt and pepper into a large bowl and mix untill everything is evenly combined. Divide into 4 shaped patties. Place a large pan on a medium high heat and add the 1 tbsp oil.
Fry the streaky bacon till crisp and set aside. Reduce the heat to medium and place the burger patties in the pan, fry for 6 minutes on either side or untill cooked through. Once cooked top with cheese and cover with a cloche or lid for 3-4 mins untill the cheese is oozing and melted.
Place the bottom of the toasted bun onto a plate, smear with the spicy mayo, top with the burger, crisp streaky bacon, pickled red onion and rocket followed by the burger bun on top.
