This is a delicious home recipe for Roasted Butternut Squash Soup, give it a go, you won’t regret it!
Ingredients:
1 tbsp of olive oil
1 Butternut Squash
600ml of vegetable stock
1 piece of ginger (roughly 1 inch) peal and finely chopped
4-5 shallots peeled and quartered
Pinch of salt
Black pepper
Chives
Crème Fraiche
Method
1. Start by peeling and chopping the butternut squash into small cubes.
2. Add the butternut squash, shallots, ginger, salt and olive oil into a roasting pan. 3. Place pan in a pre heated oven at 200c and cook for 45mins, stirring occasionally.
4. Place the squash, shallots and ginger in a blender along with the vegetable stock and blend.
5. Serve with a pinch of salt and black pepper, chopped chives, dollop of creme fraiche and crusty bread.
Tips: Depending on how thin or thick you like your soup, add or use less stock.

Ingredients just what you implore

To give the soup a zingy feel

Add chives and crème fraiche to finish the brew
Then simmered gently in a pot
And serve with bread when nice and hot
And finished off with a dollop of cream

The orange glow of pumpkin fruit
Spread far across the land
Just like a field of soldiers
Awaiting their command
With Halloween almost here
The orders will come soon
And they’ll be carved to show a face
Lit by a candle and light of moon
And they’ll sit inside a window
With a glow that’s full of grace
And watch the children trick and treat
With that smile upon their face

I used the same recipe as your butternut squash only I used a pumpkin.
The soup was delicious and not a drop was left as my neighbours helped me finish it.
They asked me how I got the recipe and I told them about your recipes on site.
