Ingredients (Makes 2)
200 ml coconut milk
4 mint leaves
1 cup of chopped pineapple
Optional: Juice of 1 lime
Method:
Chop the pineapple into chunks
Add pineapple to blender along with the rest of the ingredients
Blend until smooth
Optional: Garnish with mint leaves or a slice of pineapple.You can also add a drop of rum for a lighter version of pina colada!
