Stuffed Tomatoes recipe – Our guide to making homemade Stuffed Tomatoes!
INGREDIENTS
4 Large Ripe Beef Tomatoes
1 Tablespoon Oil
2 Tablespoons Chopped Fresh Parsley
1 Red Pepper, deseeded and cut into strips
125g (4 ½ oz.) Mature Cheddar Cheese
Salt and pepper to taste
I Onion, finely chopped
I Tablespoon Oil
I Tablespoon Breadcrumbs
METHOD
Cut tops off the tomatoes and scoop out. Set aside the tomatoes. Chop the inners of tomatoes. Heat the oil, add the chopped pepper and onions and fry until softened. Place the parsley and cheese in a blender until finely chopped.
Combine the chopped tomato inners, fried pepper and onion, parsley, cheese and breadcrumbs. Arrange the tomato shells on a roasting dish. Divide stuffing between shells. Cook for 10 – 12 minutes or until tomatoes have softened and stuffing has browned.
