Tomato and basil soup recipe – Our guide to making homemade tomato and basil soup!
INGREDIENTS
700g of fresh tomatoes (roughly chopped)
1 large onion (peeled and roughly chopped)
2 cloves of garlic (peeled and crushed)
850ml of vegetable stock
2 tablespoons fresh basil (finely chopped)
salt and pepper
2 fresh tomatoes (peeled and diced)
METHOD
Put some oil in a large pan and soften onion and garlic mix. Add tomatoes and basil. Stir in stock and bring to the boil. Simmer for thirty minutes. Then season with salt and pepper.
Strain mixture through a sieve, discarding vegetables. Serve with diced tomatoes and some shredded basil leaves as garnish.
