Cooking In The Fountain – Potato and Parsley Soup

Potato and parsley soup recipe – Our guide to making homemade potato and parsley soup!

INGREDIENTS

4 large potatoes (peeled and cubed)
1 large bunch of parsley
2 cloves of garlic (crushed)
1 large onion (finely chopped)
1.1 litres of chicken or vegetable stock
2 slices of white bread with crusts removed
salt and pepper
double cream

METHOD

Melt 25g Butter in pan and cook onion and garlic until softened. Remove stalks from parsley and chop roughly. Stir in parsley to the onion and garlic mix and pour over stock. Add potato, bring mix to boil and then simmer till potato has softened. Cut bread slices into cubes and fry in hot oil until crisp.

Put soup mixture into blender and blend until smooth. Return mix to pan, season with salt and pepper, stir in some double cream, as desired. Pour into bowls, sprinkle with croutons and serve.
