Tomato Soup recipe – Our guide to making homemade tomato soup!
INGREDIENTS
25G/1 oz. Butter
2 Onions, chopped
1 Celery Stalk, chopped
1 kg/2 lbs. Tomatoes, skinned and chopped
2 Carrots, chopped
1.75 litres/3 pints Vegetable Stock
Salt and Pepper to taste.
METHOD
Melt the butter and fry onions and celery until soft. Combine this with stock and remaining vegetables, bring to boiling point, reduce to simmer for 30 minutes approximately, until all vegetables are tender. Puree in food processor or blender. Season with salt and pepper.
HANDY TIP
To remove skins from tomatoes, place them in hot water until skin splits and peel.
