Chicken Provencal Recipe

2 Kg. of  Chicken Fillets

50g Flour seasoned with salt and pepper

50 ml. Cooking Oil

2 Garlic Cloves (crushed)

1 400 g. Can of Chopped Tomatoes

2 teaspoons of Chopped Fresh Basil

1/2 teaspoon of Grated Lemon Rind

12 Stoneless Green Olives (optional)



Cut chicken into serving pieces. Heat cooking oil in pan. Roll the chicken pieces in the seasoned flour and brown all over, stirring continuously. Transfer to a plate. Add more oil to pan and fry the onion and garlic until softened. Add the can of tomatoes, basil and lemon rind. Mix well and bring to boil. Return chicken pieces to mix and simmer until the chicken is cooked through. If using olives add one minute before serving.
